Salsa de chile cascabel is a traditional sauce originating from Central and Northern parts of the country. This rustic sauce is usually made with rich and nutty cascabel chili peppers, tomatoes, garlic, water, and salt. The chili peppers are toasted on a griddle or a comal, and they're turned during the process in order not to burn. Once golden brown, the chili peppers are blended with the other ingredients. The prepared sauce should have a loose consistency, but as it stands, the texture will eventually thicken. It's recommended to served salsa de cascabel with tacos.
