Aluvi hiki riha is a traditional potato-based dish originating from the Maldives. The dish is usually made with a combination of potatoes, onions, ginger, garlic, mustard seeds, Scotch Bonnet peppers, oil, curry leaves, cardamom, chili powder, curry powder, and salt. The potatoes are deep-fried until golden brown and crispy, then mixed with the rest of the ingredients and shortly simmered until everything is well-incorporated and the flavors have blended. The dish is served immediately, while still hot.
