The pastry consists of dough that's stuffed with ingredients such as potatoes, cheese, olives, and ground pork, which is used as a replacement for the traditional pork rinds. The cheese used for mbriulata is typically grated pecorino. The dough is made from flour, olive oil, yeast, milk, and a pinch of salt, but some people opt to use puff pastry instead. The strips of dough are rolled around the filling, creating a nice spiral after the mbriulata has been baked.
