The word 'hummus' literally means 'chickpeas' in Arabic, and the full name of the dish, 'hummus bi tahini', describes its two primary ingredients: chickpeas and tahini (sesame paste). To create this beloved dish, cooked chickpeas are blended with tahini, olive oil, lemon juice, garlic, and salt until smooth and creamy.

While the base recipe is simple, the quality of ingredients and the technique define a great hummus. The chickpeas must be tender, often soaked overnight and simmered until they almost fall apart.
