Kuddelfleck is a Luxembourgish dish derived from the fact that in the past, no part of an animal went to waste. It is made with tripes which are coated in breadcrumbs, fried, then served with one of these two sauces – white wine sauce or a spicy tomato sauce. It is recommended to serve kuddelfleck with boiled potatoes on the side.
