The name matelote means sailor in French, and the stew is also known as fisherman's Coq au vin. Although not as popular as bouillabaisse, a similar dish using saltwater fish, it has several regional variations, such as matelote Normande, which uses hard cider instead of wine. It is recommended to serve matelote with some boiled potatoes, a salad, and a crusty baguette on the side.
