Tuscan salsa verde is a traditional green sauce originating from Tuscany. It's made with a combination of parsley, eggs, anchovies, capers, pine nuts, garlic, olive oil, mixed pickled vegetables (giardiniera), and seasonings. The eggs are boiled, cut, then mixed with other ingredients until the texture becomes smooth. Olive oil is then added to the mix until it becomes creamy. The sauce is left to rest for a bit so that all the flavors can blend in, and it's then used over bollito misto or in lampredotto sandwiches. Sometimes, salsa verde is also used with crostini.
