Tocană or tocăniță is a hearty Romanian stew that may consist of different vegetables and various types of meat, preferably fattier cuts of lamb or pork, although chicken or veal may also be used. Said to have been initially consumed by Romanian shepherds, it is now widely popular and usually enjoyed at traditional restaurants or as a classic, home-cooked dish. The cornerstone of the stew is the sauce, which may vary in consistency, and include vegetables, peppers, garlic, or various spices. The dish is often complemented by dumplings, and it can also be prepared in a meat-free version. It is usually served accompanied by mămăligă (polenta).
