
Salsiccia arrosto

Sardinian salsiccia arrosto (lit. roast sausage) is a traditional meat-based second course that highlights the island’s rich culinary heritage. This dish features high-quality sausage seasoned with wild fennel and a blend of spices, while the exterior is infused with the aromas of bay leaves and myrtle, two iconic Sardinian herbs. The preparation begins by rolling the sausage into a circular shape, forming a "wheel" about 20 cm (8") in diameter, known in Sardinian as coccoi de sartiztu or sattizzu. This wheel is secured with long skewers to hold its shape. Before cooking, the sausage is pricked with a skewer to allow excess fat to escape, ensuring even cooking and a balanced texture. Cooking takes place over glowing embers on a preheated grill. The sausage is slowly roasted, allowing the flavors to develop fully. It is turned carefully a few times during the 15–20 minute cooking process to achieve a golden-brown, crispy exterior. Once done, the skewers are removed, and the sausage is sliced and served. Sardinian salsiccia arrosto is a celebration of simple, bold flavors, best paired with rustic sides like roasted potatoes, seasonal vegetables, or traditional carasau bread. This dish is not only a culinary delight but also a testament to Sardinia’s time-honored cooking traditions.
