Tomate frito is a basic Spanish sauce consisting of puréed fried tomatoes, salt, sugar, olive oil, and onions. This traditional sauce is used in numerous fish and meat dishes, but it can also be used as a base for pasta, lasagna, or pizza. Sometimes, bay leaves, garlic, or basil are added for extra flavor.
