Arbi masala is a unique vegetarian dish from North India. Its main ingredient is arbi (taro root), filled with dietary fibers and nutrients. Closely linked to potatoes, only with much more starch, it is widely available in Indian markets during the summer. For arbi masala, taro root is fried with spices such as chilies, fennel seeds, coriander, and turmeric. It can be served with or without gravy, and is traditionally consumed during the fasting period at numerous Indian religious festivities. Arbi masala can be used as an accompaniment to any main dish, and it is recommended to serve it warm with dal and Indian flatbreads such as roti, or consume it as a snack with a warm cup of tea.
