Enchiladas coloniales or colonial enchiladas is a Mexican dish originating from Chihuahua. In order to prepare it, fried tortillas are topped with shredded chicken and a sauce consisting of chili peppers, onions, garlic, and tomatoes. The tortillas are folded over, topped with sour cream and grated cheese, then baked until golden brown and bubbly. These enchiladas are traditionally served with red or black beans on the side.
