Mas riha is a rich fish curry originating from the Maldives. The curry is based on three Maldivian staples – fish, starch, and coconut. The ingredients used for the preparation of mas riha usually include tuna or swordfish, onions, garlic, ginger, curry leaves, hot peppers, coconut oil, cumin, turmeric, fennel, coconut milk, cinnamon, salt, and black pepper. The pieces of fish are added to the aromatic curry sauce near the end of cooking, and the curry is then spooned into bowls and served with rice or cauliflower rice on the side. If desired, a tablespoon of the remaining coconut milk can be drizzled over mas riha just before serving.
