It is traditionally made in a large, deep mortar with a long pestle. Some believe that the name of the dish comes from the sound that the large pestle produces when it is stamped in the mortar. When tomtom is mashed, it is then gathered, shaped into a ball, and served as an accompaniment to kalalou gonbo.
