Dessert

Though it hails from traditional French cuisine, this delicate treat enjoys immense popularity worldwide. Similar to other mousse varieties, it is created with a base of whisked egg yolks and sugar, which is then infused with coffee. The essential additions are beaten egg whites or whipped cream that give this delicacy its authentic, airy texture. Typically served in dessert glasses, mousse au café is a light sweet treat that makes a perfect ending to any meal.

Light, easy to make, and extremely elegant, caramel mousse is a French invention consisting of cream, butter, sugar, and flavorings such as vanilla or honey. The dessert is characterized by its rich caramel flavor and creamy, velvety texture. Numerous variations on the classic dish exist, such as the addition of pieces of chocolate and crushed peanuts, or a sprinkling of fleur de sel to make salted caramel mousse.

Mousse au chocolat is the French dessert of melted dark chocolate lightened with beaten egg whites, sometimes with yolks and butter folded in first, set in the fridge and served cold in a glass or spooned from a bowl. In its home form it contains no cream and no gelatine: the structure comes entirely from the air in the whites and the chocolate setting as it cools, which is why a proper one is dense, dark and faintly bitter rather than fluffy and sweet. The word mousse was used for savoury and sweet foams in French kitchens from the eighteenth century, and the chocolate version appears in recipe books by the early twentieth; it became the bistro dessert of the post-war decades, served from a large bowl at the table in the style of the Paris brasserie, and it remains the dish by which the kitchen's pastry section is most easily judged because there is nowhere to hide.

The chocolate is the dessert, and it should be a dark couverture of sixty to seventy percent cocoa, chopped and melted gently over a bain-marie with a spoon of butter or a little coffee. Egg yolks are beaten in while the chocolate is warm but not hot, which thickens the mixture and gives richness; the whites are whisked with a pinch of salt and a small amount of sugar to firm peaks that still bend at the tip, and a third is stirred into the chocolate to loosen it before the rest is folded in with a spatula in as few strokes as will leave no white streaks. The mousse is poured into glasses or a bowl and chilled for at least three hours, ideally overnight, so it sets fully. Versions with whipped cream folded in are lighter and paler and common in restaurants; the cream makes the mousse easier to hold but dilutes the chocolate, and a kitchen should say which it is making.

A spoon should go in with slight resistance and lift out a piece that holds its shape, with a texture that is airy yet dense, melting on the tongue and leaving the mouth coated with chocolate, not fat. The colour should be deep brown, the taste bitter-sweet with the cocoa well ahead of the sugar, and the egg should not be detectable. Mark down a mousse that is grainy from chocolate that seized or whites that were overbeaten, one that is foamy and collapses, which means the whites were under-whisked or the mousse was too fresh, a pale, sweet, creamy version served without warning as the classic, any taste of gelatine or raw egg white, and a mousse served straight from a cold fridge so hard it has to be scraped. A spoon of unsweetened whipped cream or a crisp tuile on the side is a reasonable accompaniment; sauces, fruit coulis and sprinkles are hiding something.

Light, creamy, and tangy, this is a classic, elegant dessert consisting of eggs, sugar, cream, lemon juice, and lemon zest. The mousse can either be spooned into serving cups and consumed on its own, or it can be used as a key ingredient in a variety of cakes. Fresh berries and mint are recommended as a garnish. Light, zesty, and refreshing, lemon mousse can be served at any time of year, but it is certainly best enjoyed chilled on a hot, summer day.

Mousse jawzia is a whipped meringue dessert made with egg whites, honey, nuts (usually walnuts), and salt. The star ingredient in these chewy, soft cookies is grape must or petimezi, a syrup-like grape molasses. It is blended into a pliable dough that combines sugar or honey, flour, leavening agent, orange juice, and spices such as cinnamon and cloves. The dough is traditionally shaped into thin rolls that are then swirled into medium-sized round cookies. Since grape must is an autumnal product, the cookies are usually enjoyed throughout autumn and winter. Their flavor is reminiscent of gingerbread, and they are best paired with a cup of coffee or tea.

Mpanatigghi are small crescent-shaped, thin-crusted cookies filled with a mixture of sugar, chocolate, almonds, lemon peel, eggs, cinnamon, vanilla, and one slightly unusual ingredient – ground beef. The name mpanatigghi is probably derived from the Spanish word empanada, meaning wrapped in bread dough, as they were first brought to Sicily during the Spanish rule in the 16th century. Nowadays they are a specialty of the town of Modica in Sicily, and due to the fact that their name is almost unpronounceable to non-locals, mpanatigghi are usually ordered just by pointing a finger at them.

Mucenici (lit. martyrs) are traditional Romanian pastries made from a sweet dough similar to that used for cozonac. They are shaped in the form of number 8, and are then boiled in water with sugar, cinnamon, and crushed walnuts, while modern variations may also employ desiccated coconut. The name of this dish derives from the Forty Martyrs of Sebaste, a group of Christian Roman soldiers who were drowned in a lake during the persecutions of Diocletian. It is said that the pastries embody the martyrs, while the water in which they are boiled represents the lake where they had drowned. Mucenici are traditionally made on March 9, the feast day of the Holy Forty.

Munkki, translated as monks, are popular Finnish deep-fried doughnuts made with buttery, cardamom-flavored, leavened dough. They are usually shaped into round forms that are occasionally complemented with sweet and fruity fillings, or in the shape of thick rings rolled in fine sugar. Numerous theories surround the origin of their name, from the idea that the round shape resembles the traditional hairstyle or the brown attire of the monks, to the claim that the monks originally prepared these deep-fried delicacies during Lent. Today, munkki are traditionally associated with May Day; the national festivity celebrated on May 1st.
