
Tortillas de pomodori

Frittelle di pomodori are traditional tomato fritters originating from Italy. The dish is usually made with a combination of tomatoes, flour, eggs, baking powder, oil, salt, and basil leaves. The tomatoes are cut into slices, seasoned with salt, and patted dry. They're dredged in flour, dipped in a batter consisting of flour, baking powder, eggs, salt, and chopped basil, and then fried in hot oil until puffed and golden on each side. The tomato fritters are seasoned with salt and served piping hot as an appetizer or a side dish. There are many variations on the dish so it's not uncommon to add grated cheese, oregano, or speck for extra flavor.
