Pan di sorc

Pan di sorc is a traditional sweet bread originating from the province of Udine. The dough is made from three different types of flour: wheat, rye, and Cinquantino (short-cycle corn). Corn is called sorc, hence the name. The dough is enriched with fennel seeds, sultanas, dried figs, cinnamon, and walnuts. The sweet bread is round and the crust is dark and fragrant. The crumb is yellow and has a typical aroma of polenta. Although this is a sweet bread, it can also be enjoyed with savory ingredients such as prosciutto. In the past, this rich sweet bread was typically made during the festive Christmas season, and it was baked in the communal village ovens, but nowadays it's baked throughout the year in the area.
