
Sofigado

Characterized by its sweet and sour flavors, this comforting beef stew hails from Lefkada island, and it is believed to have been developed under the influence of Venetian culinary tradition. It is prepared with cubed beef, generous amounts of sautéed onions, red wine vinegar, garlic, rosemary, and petimezi—traditional Greek grapemust. The dish is typically enriched with slices of quinces which are occasionally replaced with potatoes, and it is recommended to pair the stew with crusty bread on the side.
