Frittelle di riso are traditional Tuscan fritters prepared and served on the feast day of San Giuseppe (St. Joseph). The dough is made with short-grain rice, sugar, milk, flour, lemon peel, a bit of liqueur (amaretto, brandy, or sherry), and eggs. The rice, sugar, lemon peel, and milk are made into a rice pudding which is then mixed with the liqueur, egg yolks, flour, and baking powder. After the batter has cooled a bit, the whisked egg whites are folded into the mixture that is then fried in hot oil until golden. These fritters are traditionally served hot, sprinkled with powdered sugar.
