Torta mimosa
Torta mimosa is a delightful Italian cake traditionally made to celebrate International Women's Day on March 8th. The cake is named after the mimosa flower, which is a symbol for this day in Italy, because its appearance resembles the bright yellow blooms of the mimosa plant. The cake itself consists of a sponge cake (pan di spagna) that is cut into cubes and then used both inside and as a decoration on the outside, mimicking the fluffy, yellow texture of mimosa flowers.
