
Pansette de Gerzat

Pansette de Gerzat is a specialty of the eponymous French town. It was popularized in 1913 by Edmond Richardin. The dish consists of minced lamb stomach enveloped in the reticulum along with onions, salt, and pepper, while pork intestines are sometimes added to make the dish more tender. Tied with a string, pansette is cooked in a broth-based on fresh herbs and vegetables. The dish can be consumed grilled or accompanied by a sauce, and it is often accompanied by various vegetables such as potatoes, cabbage, or lentils. Even though pansette de Gerzat was once a lower class dish, these days there is an annual Pansette Fair held on the second week of October.
