
Torta di riso

Torta di riso is a simple dessert typical for Emilia-Romagna. In its basic form, this traditional specialty combines rice cooked in milk, sugar, eggs, and flavorings such as vanilla or citrus zest. Variations may include additions such as pine nuts, liqueurs, spices, or candied fruit. After baking, the top is usually drizzled with an anise-flavored liqueur, and it can be dusted with sugar. The cake was traditionally prepared for the Christian feast of Corpus Christi. On this occasion, the balconies and windows would be colorfully decorated, and the cake was often prepared and given to family and friends. The alternative name of the cake - torta degli addobbi - which translates as a decoration cake, is also believed to stem from this tradition. Torta di riso is also found in other parts of Italy, and each family will usually have their traditional recipe.
