Tray Kebab (Tepsi Kebabı)

Tepsi kebabı is the tray kebab of Antakya and Hatay: minced meat kneaded with onion, parsley, peppers and garlic, pressed thin into a round metal tray, topped with tomato and pepper and baked in a hot oven. Unlike almost every other kebab on a Turkish grill menu it never touches a skewer or open coals, and it is a dish Hatay considers its own. In Antakya families have long prepared the tray at home and carried it to the neighbourhood bakery to be baked in the wood-fired oven, a habit still seen on weekend mornings.
