Gelatin dessert is a sweet food that's made using gelatin, a protein obtained from animal collagen. This protein has the ability to gel or solidify liquids, making it a popular ingredient in various desserts. The use of gelatin dates back to ancient times. As early as the 1400s, gelatin was extracted from animal bones and used in various culinary applications in Europe. The development of pre-packaged, powdered gelatin in the 19th century made it accessible to a broader audience. In 1845, industrialist Peter Cooper obtained the first patent for a gelatin dessert powder, though it didn't immediately catch on. A gelatin dessert is typically made by dissolving gelatin powder in hot water and then adding sugar and flavorings such as fruit juice, artificial flavors, or other sweeteners. The mixture is then chilled until it sets into a jelly-like consistency. One of the most well-known examples of a gelatin dessert is the brand Jell-O, which comes in various flavors. Homemade versions can include additional ingredients such as pieces of fruit, whipped cream, or other decorative elements. Some vegetarians and vegans avoid gelatin since it's derived from animal sources. Alternative gelling agents like agar-agar, derived from seaweed, can be used to create similar desserts that don't contain animal products.

Gelato al bergamotto is a traditional ice cream that highlights the distinctive flavor of bergamot, a citrus fruit primarily cultivated in the Calabria region of southern Italy. Bergamot is renowned for its unique aromatic profile, combining floral, citrus, and slightly bitter notes, which impart a refreshing and sophisticated taste to the gelato. The preparation of gelato al bergamotto involves creating a creamy base, typically consisting of milk, cream, and sugar. This base is then infused with bergamot flavor, which can be achieved by adding bergamot essential oil, zest, or juice. The mixture is churned in a gelato machine to achieve a smooth and velvety texture, characteristic of authentic Italian gelato. In Reggio Calabria, where bergamot cultivation is a significant part of the local economy, gelato al bergamotto holds a special place in the culinary traditions. It is often enjoyed as a refreshing treat during the warm months and is sometimes accompanied by candied citrus peels or dark chocolate to complement the citrusy notes of the bergamot.

Cioccolato fondente denotes a classic dark chocolate gelato flavor that is characterized by a bold, lingering chocolate taste. It is prepared with high-quality chocolate that is combined with a base of milk, cream, eggs, and sugar. Sugar and milk perfectly complement the dark, tart chocolate making this gelato flavor one of the favorite options in many gelaterias. The variety that uses a higher percentage of dark chocolate usually goes under the name cioccolato extranoir.

Translated as flower of milk, this subtle gelato flavor is created with nothing more than milk, cream, and sugar. Though simple, it is considered to be one of the toughest varieties to master, because it offers clean, delicate flavors that are not overshadowed by additional ingredients. Because of this, it is a favorite among true gelato experts, although it is still relatively overlooked compared to the more elaborate gelato creations.

Gelato al fior di latte

Gelato alla crema is a basic Italian ice cream characterized by its smooth texture and rich flavors, achieved by using milk, sweet cream, sugar, egg yolks, and a hint of orange. Once the ice cream is prepared, it can be consumed on its own, or used as a base for other ice cream types by adding different ingredients into it before freezing, such as chopped nuts, fruit pieces, or chocolate chunks.

Crema Fiorentina is a gelato flavor made with a simple combination of egg yolks, milk, and sugar. It is often flavored with chestnut honey, while another common addition includes crumbled amaretti cookies or almond liqueur. It is a neutral ice cream flavor with delicate pale-yellow color. This gelato is usually decorated with amaretti cookies.

Strawberry gelato traditionally employs less dairy than the cream, chocolate, or nut based varieties. It should always be prepared with fresh strawberries that are usually puréed and then blended with water, lemon juice, and whipped cream. When thoroughly frozen, gelato fragola is characterized by its firm, creamy consistency, light pink color, and a refreshing and intense strawberry flavor.

Gelato alla fragola

Gelato alla liquirizia is a licorice-flavored gelato. It is made with a creamy base of milk, cream, and sugar, while the flavoring is attained from soft or powdered licorice. This ice cream typically has a light brown color, and it is usually garnished with soft licorice or licorice roots. Licorice gelato is mainly associated with Calabria, the biggest licorice producer in Italy, but it is also available in other Italian regions.

Gelato all'amarena is a traditional gelato flavor that incorporates amarena cherry preserve. The base is neutral, usually made with vanilla-flavored ice cream or with fior di latte flavor made with milk, cream, and sugar. This neural base is then streaked with amarena syrup and cherries. Amarena cherries are native to Emilia-Romagna. These dark, wild cherries are usually preserved in syrup and are then used as a topping or garnish.

A staple at every Italian gelateria, nocciola is a classic hazelnut gelato. It is prepared with a fragrant hazelnut paste that is combined with a base of milk, cream, eggs, and sugar to create a creamy treat that is characterized by its nutty flavor. The best hazelnut gelato in Italy is produced from Piemonte hazelnuts, which are considered the finest variety for the confectionery industry. They provide the delicate, nutty flavor and the characteristic aroma. Nocciola or hazelnut gelato is often combined with chocolate to create bacio—another popular gelato flavor—but most gelaterias offer it on its own, as an essential addition to their offer.

Gelato alla nocciola

Peach gelato is one of the classic fruit-based gelato flavors. It is prepared with ripe puréed peaches that are either incorporated with milk, cream, eggs, and sugar, or combined with water, lemon juice, and whipped cream to create the base of the gelato. If made with fresh peaches, the gelato should have a light orange color, while the vibrant-colored varieties may signal a use of artificial ingredients. Gelato alla pesca is characterized by its subtle peachy flavor and a dense, creamy texture.

This classic gelato flavor is prepared with a base of milk, cream, eggs, and sugar that is enriched with flavorful vanilla beans. Like other gelato varieties, it is characterized by its dense, creamy texture and is often used as a base to which nuts, fruit, or other ingredients are added to create new flavors. Though one of the original types of gelato, this frozen vanilla-based delicacy remains as one of the most popular gelato flavors.

Gelato alla vaniglia

Gelato alle mandorle is a traditional gelato flavor made with almonds, while the base typically includes cream, milk, and sugar or honey. This gelato flavor is usually made with roasted almonds as they have a more intense aroma and flavor. The almonds are finely ground and turned into a paste before they are mixed with the creamy base. The result is creamy ice cream with a dominant almond flavor. It is typically garnished with chopped almonds.

The refreshing lemon gelato is prepared with a base of milk, cream, eggs, and sugar that is typically enriched with lemon juice, lemon zest, and occasionally limoncello. The taste of lemon should not be overpowering, and the emphasis should be on the delicate flavors and the dense, creamy texture of the gelato. Though it is mainly enjoyed plain, lemon gelato is occasionally garnished with fresh basil or candied lemon peel.

Gelato al limone

Many Italian gelato varieties have been modeled on the popular desserts. The same goes for zabaglione, a gelato flavor that replicates the taste of the velvety zabaglione custard. Similar to the dessert, this gelato is made by whisking egg yolks and sugar until the combination transforms into a smooth, foamy cream. The custard is then incorporated into a base of milk and cream, and the mixture is traditionally enriched with wines that are high on the sweet scale, such as Marsala or Vin Santo. This frozen version of the zabaglione dessert is popular throughout the country, and though it is best enjoyed plain, it is occasionally topped with fresh seasonal fruit.

Gelato allo zabaione

Gelato al melone is a refreshing Italian gelato flavor made with fresh melons (cantaloupes). It is usually made with milk, eggs, sugar, and cream. The melons are pureed before they are added to the base. Variations sometimes leave out eggs or include condensed milk or mascarpone cheese. This light and refreshing gelato is available in many ice cream shops in Italy, and it is typically a seasonal summer flavor.

Gelato al pistacchio is the flavour by which Italians judge a gelateria, because it cannot be faked cheaply: a proper one is made from a paste of roasted pistachios ground to oil, worked into a milk base, and it comes out a muted olive-khaki colour rather than the bright green of the almond-and-colouring versions sold by the beach. The reference nut is the pistachio of Bronte, grown on the lava slopes of Etna in Sicily, harvested in alternate years and sold at several times the price of Iranian or Californian nuts, which is why the word "Bronte" on a gelateria sign is either a mark of seriousness or a lie. Sicily is also where pistachio gelato is most at home, eaten in a brioche col tuppo for breakfast in Catania and Palermo, but it is on the counter of every gelateria in Italy and is usually the best-selling flavour after chocolate and hazelnut.

The paste is the whole job. Pistachios are lightly roasted, sometimes with a fraction of their skins left on for flavour, and ground in a stone mill or refiner until the oil releases and the mass turns to a thick, pourable cream; a few producers add a small percentage of almond to smooth it, and any more than that is adulteration. The base is milk, a little cream, sugar and often a small amount of dextrose or skim-milk powder to hold texture, pasteurised, cooled and left to mature for several hours before the paste is blended in at between eight and twelve percent by weight. It is then churned in a batch freezer to about minus twelve degrees and served from a pozzetto or a covered tub at a temperature where it is dense but spreadable. No egg is traditional in the Sicilian version, and the flavour should not need vanilla.

Colour is the first test: a pale greenish-brown with visible dark flecks is right, a vivid green is not, and a grey-beige one has usually been made with too much almond. The taste should be of roasted nut, faintly salty and slightly bitter at the finish, with the milk in the background and the sugar below the point where it coats the palate; the texture should be dense and smooth, melting slowly on the tongue, with no ice crystals and no gumminess. Mark down any pistachio gelato that tastes of marzipan, which means almond paste or artificial flavouring, a product sitting in tall fluffy mounds above the rim of the tub, which means it has been whipped with air and stabilisers, a greasy film in the mouth from too much vegetable fat, and chopped nuts scattered on top to suggest a content the gelato itself does not deliver.

Gelato al torrone is an ice cream flavor made with nougat. Italian nougat is known as torrone, and it is traditionally made with whipped egg whites, sugar or honey, and toasted almonds, though it can also be studded with other nuts, such as walnuts, peanuts, hazelnuts, or pistachios. There are several variations of this gelato flavor. The base is always neutral, typically based on milk, cream, and sugar or whipped egg whites and honey. The flavoring comes from chopped-up nougat (which can be homemade or store-bought) or chopped caramelized almonds.

Gelato al torrone

Cioccolato is a variety of Italian gelato that is prepared with chocolate and cocoa powder as the key ingredients alongside cream, sugar, and milk. The final product, if made properly and churned at low speed, should have a dense and velvety texture, and a rich, dark brown color. Not much is known about the origins of chocolate gelato, although it is a fact that the first frozen chocolate recipe had been published in Naples in 1692, in a book called The Modern Steward.

This gelato variety is characterized by a subtle coffee flavor which is achieved with the addition of strong coffee to the base of milk, cream, eggs, and sugar. Alternatively, the base can be infused with roasted coffee beans. Caffè gelato is a great substitute for a traditional coffee, especially in the warm summer months. The classic version is occasionally enriched with chocolate chips, while the gelato may come in the robust espresso version or as the more subtle mocha or café au lait gelato. In Italy, all varieties are popular and are found in numerous gelaterias throughout the country.
