Despite its name, this Sicilian treat is not technically a gelato and is better classified as a nougat. It is a sweet combination made with sugar, nuts, and candied fruit that typically comes in three colors—white, green, and pink—which supposedly depict the Italian flag. Sometimes, it also includes the fourth, brown-colored section. The base is made with sugar and ground almonds, and it is divided into three sections, which are then colored accordingly. Usually, the base will also incorporate nuts, typically pistachios or almonds, and different types of candied and dried fruit. The pliable base is arranged into molds, and when set, it is cut into smaller pieces. Gelato di campagna, which translates as countryside ice cream, is enjoyed throughout Sicily, and it is typically prepared for the Festino di Santa Rosalia. It is presumed that it has Arab origins.

Gelo di melone is a traditional Sicilian dessert that most usually consists of watermelon juice, sugar, starch, candied fruit, nuts, and cinnamon. The result is a flavorful watermelon jelly pudding that is typically prepared for Ferragosto (15 August, a popular Italian holiday) and on 15 July in Palermo to honor the city's saint, Rosalia. Quite often, the dessert is decorated with chocolate chips which resemble (and represent) watermelon seeds. It is recommended to serve gelo di melone in cups, when fully chilled.

A typical dessert of the East Flanders, mattentaart is a small puff pastry pie with a tender, almond-flavored cheese curd filling called mattenbrij. These delicious Flemish pies are traditionally made in the city of Geraardsbergen and the neighboring village of Lierde, and their production depends heavily on the Geraardsbergen area's dairy produce, since genuine mattentaarts are prepared using only fresh milk, butter, and buttermilk from the local farms. Although the origins of mattentaart can be traced back to the Middle Ages, the oldest known recipe was found in Een Notabel Boecxken van Cokeryen, the first cookbook in Dutch, written and published in 1514 by Thomas van Der Noot. Later on, the famed mattentaarts were even depicted by the Flemish Renaissance painter and printmaker Pieter Bruegel the Elder in his 1567 painting The Peasant Wedding. And even though mattentaart is today famous throughout Belgium and abroad, in 2006, this pie has been declared a regional product protected by the European Union which means it can only be called mattentaart if it is produced in Geraardsbergen or Lierde.

Despite its name, German chocolate cake is an American invention, a decadent dessert consisting of three interspersed layers of buttermilk sponge and chocolate, combined with desiccated coconut and peanuts. The cake is often garnished with even more desiccated coconut, pecans, or maraschino cherries, giving it a luxurious visual appearance. The name comes from Sam German, who invented a baking chocolate for Baker's chocolate company in 1852, and in return, the company named the cake in his honor. The cake became famous in 1957, when a Texas cook sent her recipe to a Dallas-based newspaper. As time went by, the possessive form was lost, creating the name German chocolate cake, which gives the wrongful impression of the cake's German origin until this day, although it is an American classic, celebrated every year on June 11, also known as the National German Chocolate Cake Day.

Indonesia

This versatile Indonesian dessert is made with boiled and mashed cassava. The cassava base is then sweetened and often enriched with coconut and natural or food colorings in order to create decorative sweets. The rustic version combines mashed cassava and dark palm sugar (gula melaka), which imparts the dish with a typical brown color. Modern varieties (getuk lindri) are often finely ground with the help of a meat processor. They are tinted with vibrant colors and shaped into visually appealing cakes that are then cut into smaller pieces. Besides cassava, getuk is also prepared with taro, bananas, or sweet potatoes. This typical street food is usually associated with Java.

This classic flavor combines hazelnuts and milk chocolate into a rich, smooth gelato. Though similar to the bacio flavor, gianduia is typically prepared with milk chocolate and does not incorporate crushed hazelnuts. It was modeled on gianduia, an iconic Italian cocoa, sugar, and hazelnut paste that was initially introduced in the 19th century. Similar to the gianduia confection, the gelato is also usually associated with Piedmont, a region famous for its hazelnuts, but it is commonly found in numerous gelaterias throughout the country.

Piedmont's signature pralines are made with gianduia — a silky smooth cocoa, sugar, and hazelnut paste that owes its unmistakable flavor to roasted Piedmontese hazelnuts of the Tonda gentile variety. Even though some sources claim the blend was invented in the early 1800s, it wasn't until half a century later that gianduia was perfected by a Turinese chocolatier named Caffarel. According to one legend, the first gianduia pralines were introduced in 1865 during the Turin carnival. They were originally called givù, which means tidbits in local dialect, and supposedly gained the name gianduiotto after being handed out to the people in the streets by Caffarel himself, who was dressed as Giandujot, one of the most popular characters of the Italian commedia dell'arte.

Fagioli all’uccelletto is a soul-warming, deeply traditional Tuscan dish that perfectly embodies the humble, heart-felt philosophy of 'cucina povera' (peasant cooking). Originating from the fertile countryside around Florence and Pistoia, this dish turns simple cannellini beans into a rich, aromatic masterpiece that has comforted generations of Italians. The name itself is a curious linguistic mystery; 'all’uccelletto' literally translates to 'in the style of small birds'. This doesn't mean the dish contains meat; rather, it refers to the specific blend of aromatics used in the preparation — primarily sage and garlic — which were the same herbs traditionally used when roasting small game birds over an open fire. The beans are cooked 'as if they were little birds,' infusing them with a rustic elegance that elevates them far beyond their modest origins.

The alchemy of Fagioli all’uccelletto begins with the choice of beans. While high-quality canned cannellini beans can be used in a pinch, any Tuscan purist will insist on using dried beans, soaked overnight and simmered slowly until they are tender but still hold their shape. The magic happens in a heavy-bottomed pan, traditionally a terracotta pot, where a generous amount of premium extra virgin olive oil is heated with whole, slightly crushed garlic cloves and plenty of fresh, fragrant sage leaves. The aroma of sage frying in olive oil is the quintessential scent of a Tuscan kitchen. Once the aromatics have released their essence, a splash of rich, crushed tomatoes (pomodori pelati) is added, creating a thick, savory sauce that will cocoon the beans. The simmered beans are then added to the pan, and the mixture is allowed to cook together slowly, allowing the beans to absorb the flavors of the garlic, sage, and tomato into their creamy centers. A final seasoning of sea salt and plenty of freshly ground black pepper is essential to bring all the elements into focus.

In the grand tradition of Tuscan dining, Fagioli all’uccelletto is remarkably versatile. It is most famously served as a 'contorno' (side dish) alongside a massive Bistecca alla Fiorentina (Florentine steak) or grilled pork sausages (salsicce), where its rich, saucy texture provides a perfect contrast to the charred, salty meat. However, it is equally satisfying as a main course, especially when served in a shallow bowl with a thick slice of toasted, unsalted Tuscan bread (pane toscano) to soak up every last drop of the savory tomato and sage sauce. The dish is a testament to the idea that a few well-chosen ingredients, treated with time and respect, can create a meal that is both deeply nourishing and profoundly flavorful.

When it comes to drink pairings, Fagioli all’uccelletto calls for the rustic charm of a red wine from its home region. A classic Chianti Classico, with its bright acidity and notes of cherry and herbs, is the ideal companion, as it cuts through the richness of the olive oil and harmonizes with the earthy sage. For a more casual pairing, a simple, young Sangiovese will do the job perfectly. To experience this dish in its most authentic habitat, one should visit a traditional 'trattoria' in center of Florence, like 'Sostanza' or 'Mario', or a countryside inn in the Mugello valley. In these places, the dish is still prepared with the slow, deliberate care it deserves, often using beans grown in the nearby hills. It is a dish that speaks of the land, of history, and of the enduring beauty of simple, honest food.

Traditionally associated with Sicily and Calabria, giurgiulena is a type of brittle nougat that combines honey, sugar, and sesame seeds. It is often enriched with almonds or candied orange peel, and is usually cut into diamond shapes. Along with many other Sicilian desserts, it is believed that giurgiulena originated during Arab rule, since its name stems from the Arabic gulgulān, meaning sesame. Usually decorated with colorful confetti, this Sicilian nougat is typically enjoyed during Christmastime.
