Risotto al caviale is a traditional caviar risotto. It's made with a combination of risotto rice, white wine, caviar, heavy cream, onions, butter, and seasonings. The risotto is cooked in a regular way until the rice becomes tender. Once the dish has been prepared, it's seasoned with salt and pepper, while a bit of caviar is added on top of the rice. This risotto is especially popular on Christmas Eve and during the festive Christmas season.
