Sakata ramen is a traditional noodle soup originating from the city of Sakata in Yamagata Prefecture. What makes this ramen unique are homemade noodles, which are made in about 80% of local restaurants. The thin and curly homemade noodles are served in a simple soy sauce-based broth that's flavored with seafood stock, pig's feet, and chicken stock. The ramen is finished off with the addition of fatback, which gives the ramen a thick and velvety consistency. Many restaurants also add wontons to their Sakata ramen.
