Stäerzelen are simple Luxembourgish dumplings made by cooking buckwheat flour in boiling salted water. The resulting doughy mixture is then shaped into dumplings with the help of a spoon that has previously been dipped into hot fat. These hearty buckwheat dumplings are typically served drizzled with milk, cream, or various sauces, although they can also be paired with fried bacon bits, chopped speck, or grated yellow cheese. The name of these dumplings derives from the word stäerzel, meaning a spoonful, referring to the way the dumplings are shaped.
