Appetizer

What was once a popular Victorian breakfast is nowadays a light lunch or a flavorful appetizer: the dish is called devilled kidneys, made by frying lamb kidneys in a rich, spicy sauce made with vinegar, mustard, Worcestershire sauce, a pinch of cayenne pepper, and sometimes a bit of fruit jelly. It is usually garnished with freshly chopped parsley and served with fried white or sourdough bread. The dish first appeared during the 18th century, but it grew in popularity during the 19th and the 20th century.

Dinakdakan is a traditional Filipino dish originating from the Ilocos region in the northern part of the Philippines, a type of grilled pork salad, often made from various parts of the pig such as the ears, the head, and liver, though other pork cuts can also be used. The meat is boiled until tender, then grilled or broiled to add a smoky flavor, chopped into bite-sized pieces, and finally mixed with a dressing. The distinctive dressing for dinakdakan includes vinegar, calamansi juice (a type of citrus similar to lemons and limes), onions, ginger, and chili peppers. A key ingredient that sets Dinakdakan apart from other Filipino dishes is the addition of pig's brain or mayonnaise as a binding agent, giving the dish a creamy texture. The pig's brain traditionally used in the dish thickens the sauce and adds a unique flavor, but mayonnaise is a common substitute for practicality and to cater to different preferences. Dinakdakan is often served as an appetizer or a main dish and is a staple at gatherings and special occasions.

Donzelle are little puffs of deep-fried bread dough, though they can also be made with leftover pizza dough. Served sprinkled with salt while they are still hot, donzelle make a delicious accompaniment to any antipasto platter and are traditionally enjoyed with Italian cheese and salami. However, they can also be sprinkled with sugar, when they are consumed as an after-meal sweet treat. Depending on the region, they also go under the name ficattole or zonzella, while a similar round-shaped pastry is known as coccoli.

Although the ingredients and the methods of preparation may vary, drob de miel usually consists of a mixture of ground lamb offal, bread dipped in milk, chopped herbs, hard-boiled eggs, and vegetables, wrapped in lamb caul fat. The meatloaf is baked in the oven and can also be prepared with pastry sheets instead of lamb caul fat, a dish known as drob de miel în aluat. Due to its similarity to the Scottish haggis, this dish is often called Romanian lamb haggis. In Romania, this is a typical Easter dish, served as a main course accompanied by various side dishes, or as a simple appetizer.

Dublin Bay prawns with mayonnaise is a traditional dish that's often found in seafood restaurants, especially along southern and southeastern coasts. It's usually made with a combination of fresh Dublin Bay prawns, lemon juice, mayonnaise, salt, and chives. The prawns are placed in a pot of boiling water, drained, refreshed with cold water, and the meat is pulled out of the shells in one piece. The meat is left to cool down to room temperature, deveined, and the prawns are rinsed and dried with paper towels. They're mixed with lemon juice, mayonnaise, chives, and salt, and the mixture is tossed so that the prawns are fully coated with mayonnaise. This dish (or a salad) is typically served on toasted bread or on a bed of shredded lettuce.

Duvan čvarci is a version of pork cracklings originating from Serbia. Unlike the usual pork crackling, duvan cracklings contain only 10% of fat, which is the reason for their unique flavor. Another distinct feature is their appearance, which is reminiscent of thinly cut tobacco. Just like regular cracklings, duvan cracklings are often served as an appetizer. They’re considered a delicacy because the preparation process takes a long time and results in small quantities of the cracklings. Duvan cracklings are primarily associated with the city of Valjevo, where the Duvan čvarci festival is held every year.

Eggah is the thick and heavy Egyptian version of an omelet. However, eggs might not be the main ingredient – they can merely be used as a binding for the filling, which can include chicken, lamb, or various vegetables such as eggplants, leeks, spinach or potato. Eggah is commonly flavored with turmeric, cumin, nutmeg, cinnamon, or fresh herbs. The dish is typically pancake-shaped, and it is served sliced into wedges or rectangles which can be hot or cold.

Originally invented at the famous Antoine's restaurant in New Orleans, eggs Sardou is a Creole dish consisting of poached eggs, creamed spinach, Hollandaise sauce, and artichoke bottoms. The dish got its name after Victorien Sardou, a 19th-century French playwright who was staying in the city when the dish was invented. Eggs Sardou are traditionally served warm on a warmed plate and garnished with chopped ham, anchovies, and black truffle slices. It is recommended to pair the dish with a glass of slightly sweet white wine.

Enoki Maki is a delicate and sophisticated staple of Japanese 'izakaya' (gastropub) culture and sushi bars, showcasing the elegant simplicity of Japanese culinary techniques. This dish typically consists of slender, snow-white Enoki mushrooms (Flammulina velutipes) tightly wrapped in a thin layer of savory protein—most commonly thinly sliced beef tenderloin or premium pork belly—and then expertly grilled or pan-seared to perfection.

The story of Enoki mushrooms themselves is one of agricultural mastery and artistic cultivation. While wild Enoki (known as winter mushrooms) grow in clusters on the stumps of Chinese hackberry trees in the wild, appearing shorter and darker with a more pronounced cap, the cultivated variety we see today is a product of scientific precision. They are grown in dark, CO2-rich environments to achieve their iconic long, needle-like stems and tiny, porcelain-white caps. This unique growth method makes them one of the most recognizable fungi in the world. When these mushrooms are wrapped in meat, they act like a biological sponge during the cooking process. As the heat hits the rolls, the Enoki release their subtle moisture while simultaneously absorbing the rich, umami-laden fats and juices released by the searing beef or pork. This creates a flavor bomb that is uniquely Japanese in its restraint and depth. Traditionally, Japanese mothers would prepare these in 'bento' boxes, but they truly shine in the smoke-filled atmosphere of a late-night izakaya where the sizzle of the grill adds to the sensory experience.

The preparation of Enoki Maki is a lesson in balance and precision. The meat must be sliced paper-thin—often slightly frozen to allow for precise cutting—so that it cooks quickly enough to stay tender without overcooking the mushrooms. Once the roll is formed, it is placed on a charcoal grill, ideally fueled by 'binchotan' (white charcoal). The intense, clean heat of the binchotan creates a beautiful Maillard reaction on the meat, providing a savory crunch that contrasts with the snap-like texture of the Enoki stems. In many high-end izakayas, the chef will brush the rolls with a house-secret 'tare'—a reduction of soy sauce, mirin, sake, and sugar that has been aged for months, if not years. This glaze caramelizes into a deep, glossy brown, adding a sweet-savory complexity that elevates the dish to a gourmet level.

In terms of pairings, Enoki Maki demands beverages that can handle its richness while respecting its delicacy. A crisp, bone-dry Junmai Ginjo sake with notes of melon and pear is the classic choice, as its acidity and clean finish cleanse the palate of the meat's fats. For those who prefer beer, a light Japanese lager like Sapporo or an artisanal pilsner provides a refreshing contrast. Non-alcoholic options like iced Oolong tea or hot Genmaicha (brown rice tea) offer nutty, roasted notes that echo the char of the grill. For a complete meal, it is best enjoyed alongside other 'yakitori' or 'kushiyaki' items like grilled shiitake mushrooms, chicken thighs with scallions (negima), and perhaps a refreshing sunomono (cucumber and seaweed salad) or a bowl of steaming miso soup to provide a savory base.

To find the most authentic Enoki Maki, a pilgrimage to the narrow 'Yokocho' alleys or 'Piss Alley' (Omoide Yokocho) in Shinjuku, Tokyo, is highly recommended. In these tiny, smoke-filled establishments, masters of the grill have spent decades perfecting the timing required to keep the Enoki 'al dente' while achieving the perfect sear on the meat. The air is thick with the aroma of charcoal and tare, creating an unforgettable atmosphere. However, the dish has also found its way into modern fusion cuisine in global food capitals like London, Paris, and Singapore, where chefs might experiment with wagyu beef, truffle-infused glazes, or even a dusting of shichimi togarashi (seven-flavor chili pepper) for an extra kick. Regardless of where it is found, Enoki Maki remains a symbol of the Japanese philosophy of 'wa' (harmony), where simple, high-quality ingredients are brought together to create something far greater than the sum of its parts. It is a dish that invites you to slow down, savor the texture, and appreciate the craftsmanship behind every single roll.

Ensalada Rusa, broadly known as Russian Salad or Olivier Salad, is a culinary globetrotter with a history as layered as its ingredients. Despite its name, its most famous iteration was perfected in the 1860s by Lucien Olivier, the Belgian-born chef of the celebrated Hermitage restaurant in Moscow. The original recipe was a closely guarded secret, featuring expensive and exotic delicacies like grouse, grouse breast, veal tongue, caviar, smoked duck, and crayfish tails, all bound together by a mysterious, house-made Provençal dressing crafted from premium French ingredients. This salad was more than just a dish; it was a status symbol for the Moscow elite, a luxurious testament to the height of 19th-century fine dining. The restaurant was the place to be, and the salad was its crown jewel.

However, the history of the Russian Salad is also a story of adaptation and survival. During the Russian Revolution and the subsequent years of extreme scarcity in the Soviet Union, the recipe underwent a radical transformation. The rare and expensive proteins were replaced by more accessible ingredients: boiled potatoes, carrots, peas, and canned meats (such as Doctor's sausage) or pickles. This more egalitarian version, though far removed from Lucien Olivier's secret formula, managed to capture the hearts of the masses and spread across Eastern Europe and beyond. In Spain, where the dish arrived in the early 20th century, it took on a life of its own, becoming the 'Ensalada Rusa' that is now an absolute staple of every tapas bar from the Atlantic coast of Galicia to the Mediterranean shores of Andalusia. It is a dish that has truly crossed the iron curtain and conquered the world.

In Spain, Ensalada Rusa is an institution. While every chef and every 'abuela' (grandmother) has their own definitive version, the core architecture remains consistent and precise. It starts with finely diced boiled potatoes and carrots—cooked to the point of tenderness but retaining their distinct shape. To this, peas and often finely chopped hard-boiled eggs are added. The protein element in the Spanish version is almost always high-quality canned tuna, typically preserved in olive oil (atún en conserva). The binder is a generous amount of creamy, rich mayonnaise, which acts as the canvas for all these disparate flavors. Some regions add small bits of olives, piquillo peppers, or even apple for a subtle crunch, but the hallmark of a great Ensalada Rusa is the quality of the emulsion and the balance of its textures. It should be chilled, but never freezing, allowing the flavors of the tuna and the creaminess of the mayo to dance on the palate.

The social significance of Ensalada Rusa cannot be overstated. It is the star of Sunday family lunches, festive holiday spreads, and the ultimate rescue during hot summer evenings when the 'terrazas' are filled with people seeking refreshing tapas. It is almost always served with 'picos' or 'regñás'—small, incredibly crunchy breadsticks from the south of Spain—which are used like edible spoons to scoop up the creamy mixture. For a more substantial experience, it is frequently served alongside fried seafood like calamari or grilled fish, where its cool, creamy acidity provides a perfect foil to the salty, crispy proteins. In some places, it’s topped with extra strips of roasted red pepper or a few whole prawns to add a touch of elegance.

When it comes to beverage pairings, the Spanish tradition offers two distinct paths. The first is a chilled glass of dry Manzanilla or Fino Sherry from Jerez, whose nutty and saline notes harmonize perfectly with the tuna and mayonnaise. The second, more casual option is a tall, frosty glass of lager beer (una caña), which cuts through the richness of the salad and refreshes the palate. To experience Ensalada Rusa in its native Spanish habitat, one should visit a traditional tapas institution like 'Rafa' in Madrid, 'Bodega de la Ardosa', or any of the historic seafood bars in Seville like 'El Rinconcillo'. In these temples of gastronomy, the salad is often the most requested item, proving that even a dish born of 19th-century luxury and refined through 20th-century necessity can remain a timeless, beloved favorite in the 21st century. It is a comforting, universal dish that reminds us that sometimes the simplest ingredients, when combined with care, can create the most enduring memories.

Erbazzone Reggiano, also known as 'Scarpazzone' in the local dialect, is a rustic and deeply traditional savory pie that encapsulates the culinary soul of the Reggio Emilia province in the heart of Italy's Emilia-Romagna region. Its heritage is rooted in the simple, resourceful peasant kitchens of the past, where the principle of 'nothing is wasted' was the guiding light of daily life. The name 'Scarpazzone' literally alludes to the 'scarpa' (shoe) style, specifically referring to the historical use of the white stalks or 'heels' of the chard, which were considered the less valuable part of the vegetable but were thriftily incorporated into this hearty filling. Today, Erbazzone is no longer just a humble farmhouse snack; it is a celebrated artisanal product with a protected identity, cherished as a symbol of Reggian pride and history.

The construction of Erbazzone is a masterclass in balancing earthy, salty, and pungent flavors. The filling is a lush, vibrant green mixture of boiled chard (or occasionally spinach), combined with sautéed onions, plenty of garlic, and a generous amount of freshly grated Parmigiano Reggiano—the 'king of cheeses' that is produced right in the same fertile province. However, what truly gives Erbazzone its intoxicating soul is the addition of 'lardo' (cured pork fat) or 'pancetta'. This fat is finely chopped and sautéed with the greens, melting into the mixture to provide a richness and depth of flavor that is uniquely Emilian. This aromatic filling is encased between two thin layers of 'pasta matta' (crazy dough), a simple, unleavened dough made of flour, water, and lard. Before being sent to the oven, the top is often brushed with lard and pricked with a fork, resulting in a golden-brown, flaky crust that yields to a moist, savory, and incredibly fragrant interior.

In terms of dining matches, Erbazzone Reggiano is exceptionally versatile. It is traditionally enjoyed as a snack, an appetizer, or even a light lunch. Because it is equally delicious at room temperature as it is warm, it has long been the perfect addition to a picnic basket for a day in the Apennine foothills or a centerpiece for a festive 'aperitivo' platter. It pairs magnificently with a glass of sparkling Lambrusco di Reggio Emilia, whose lively bubbles and bright acidity cut through the richness of the lard and the saltiness of the parmesan, creating a perfect harmony on the palate. For true cheese aficionados, serving it with a few extra slivers of aged Parmigiano Reggiano on the side enhances the experience by highlighting the nutty notes within the pie.

To experience the most authentic Erbazzone, one must wander through the vibrant street markets and the historic bakeries (locally known as 'forni') that line the cobblestone streets of Reggio Emilia. Many families and local artisans still guard their own secret variations—some might add a touch of breadcrumbs to the filling for a firmer body, while others might emphasize a particular blend of wild herbs depending on the season. While it is a staple in every household and bakery across its home province, it remains a relatively hidden gem outside of Italy, making it a mandatory discovery for any culinary explorer seeking the genuine, unpretentious flavors of the Italian countryside. It is more than just a vegetable pie; it is a warm, savory embrace from the fertile plains of the Po Valley, a bite of history that connects the present with a hardworking, flavorful past.

Erizos con salsa verde is a traditional appetizer originating from Chile. The dish is usually made with a combination of sea urchins, onions, parsley, lemon juice, olive oil, salt, and white pepper. The orange flesh (uni) is taken out of the shells, washed, drained, and arranged in a serving bowl. The onions, parsley, lemon juice, olive oil, salt, and pepper are mixed and poured over the sea urchin flesh. The dish is served with lemon wedges on the side. This rich, creamy, and slightly sweet appetizer can be found along the Chilean coastline.

Escalivada is a classic Catalan dish that perfectly captures the smoky, sun-drenched flavors of the Mediterranean coast of Spain. The word 'escalivada' itself comes from the Catalan verb 'escalivar', which literally means 'to cook in embers'. This name is the key to the dish's soul: traditionally, entire vegetables—most notably eggplants (aubergines), red bell peppers, onions, and sometimes ripe tomatoes—are roasted directly on the hot ashes or glowing embers of a wood fire. They are left until their outer skins are charred, blackened, and blistered, while their inner flesh becomes incredibly tender, silky, and infused with a deep, earthy sweetness. This primitive but effective cooking method imparts a unique, profound smokiness that simply cannot be fully replicated in a conventional modern oven.

The process of preparing Escalivada is a lesson in patience and respect for simple ingredients. Once the vegetables are perfectly roasted and have had time to cool slightly, the charred skins are carefully peeled away by hand—a delicate task that ensures none of the precious flesh is lost. The seeds of the peppers are removed, and the tender vegetables are then shredded into long, elegant, and colorful strips. These are arranged beautifully on a serving plate, creating a vibrant mosaic of deep purple, bright red, and translucent white. The final touch is what elevates the dish from simple roasted vegetables to a culinary masterpiece: a generous drizzle of premium extra virgin olive oil, a gentle sprinkle of flaky sea salt, and often a dusting of finely minced fresh garlic. The simplicity of the seasoning allows the intense, fire-kissed essence of the vegetables to take center stage.

Escalivada is a remarkably versatile dish that fits into many different dining scenarios. In the Catalan tradition, it is often served as a ‘primer plat’ (first course) or as part of a larger spread of 'platillos' (shared plates). One of its most iconic and beloved pairings is with salted anchovies or premium tuna belly (ventresca), where the sharp saltiness of the fish provides a perfect acoustic balance to the smoky sweetness of the peppers and eggplants. It is also frequently served on 'torrades'—large slices of rustic, toasted bread rubbed with tomato (pa amb tomàquet)—creating a hearty and soul-satisfying snack or light meal. For a more substantial feast, Escalivada is the quintessential accompaniment to grilled meats, particularly lamb chops or pork sausages, where its moist texture and smoky notes complement the char of the meat brilliantly.

When it comes to beverage pairings, Escalivada calls for something that provides a refreshing contrast to its smokiness. A glass of crisp, chilled Catalan Rosat (rosé) or a traditional Cava is the gold standard, as the bubbles and acidity cleanse the palate and enhance the vibrancy of the vegetables. For red wine lovers, a light and fruity wine from the Penedès region can also be a wonderful match. To experience Escalivada at its most authentic, one should venture into the 'masias' (traditional country farmhouses) of the Catalan interior or the historic neighborhoods of Barcelona, like Gràcia or El Born. In these places, the vegetables are still often roasted over real wood fires, and the resulting dish is a sensory journey into the heart of Mediterranean culinary heritage. It is a dish that speaks of autumn harvests, the warmth of the fire, and the timeless beauty of well-chosen, simply prepared ingredients.

Escargot, the French word for 'snail', is one of the most iconic, celebrated, and sometimes debated delicacies of Gallic gastronomy. While the consumption of snails dates back to prehistoric times across the Mediterranean basin, it was the French who truly perfected the art of transforming these modest gastropods into an elegant, high-dining experience that is synonymous with culinary refinement. The most prized variety for connoisseurs is the ‘Escargot de Bourgogne’ (Helix pomatia), known for its substantial size, meaty texture, and delicate, slightly earthy flavor. These snails are not merely food; they are a symbol of French cultural identity and the pursuit of gastronomic pleasure.

The preparation of Escargot is a meticulous and time-honored process that begins long before the snails ever reach the kitchen. The snails must be carefully cleaned and often undergo a period of 'purging' through a special diet of herbs or flour to ensure their safety and optimal taste profile. They are then gently simmered in a rich 'court-bouillon' seasoned with white wine, aromatic onions, carrots, and a bouquet garni of herbs. However, the true star of the dish—and the reason for its enduring popularity—is the 'Beurre Escargot'. This is an aromatic compound butter made with high-quality, unsalted French butter, an abundance of finely minced fresh garlic, a mountain of bright green flat-leaf parsley, and often a touch of shallots, a pinch of salt, and freshly ground black pepper. The cooked snails are carefully tucked back into their cleaned shells, topped with a generous plug of this fragrant garlic-parsley butter, and baked in a specialized oven until the butter is bubbling, golden, and the intoxicating aroma fills the entire dining room.

Eating Escargot is as much a ceremony as it is a meal, requiring a specific set of tools and a certain level of finesse. One typically uses 'snail tongs' (pince à escargots) to hold the hot shell steady in one hand, while a slender 'snail fork' (fourchette à escargots) is used with the other hand to delicately extract the succulent morsel from within. The moment of extraction is the climax of the experience—the tender snail emerges completely enveloped in a pool of creamy, garlicky warmth. A crucial and non-negotiable part of the ritual is having plenty of fresh 'baguette de tradition' on hand. The bread is used to mop up every last drop of the emerald-colored, garlic-infused butter from the bottom of the plate, ensuring that none of that liquid gold goes to waste.

In terms of pairings, Escargot demands a wine that can stand up to the boldness of the garlic and the richness of the butter while respecting the delicate earthiness of the snails themselves. A classic white Burgundy (Chardonnay), especially one from the Chablis region with its distinct mineral notes, is considered the gold standard. Alternatively, a Meursault or a Puligny-Montrachet can provide a more buttery profile that harmonizes with the dish's centerpiece. For those who prefer bubbles, a glass of chilled, crisp Champagne adds a festive and refreshing dimension. Escargot is typically enjoyed as a ‘hors-d'œuvre’ (appetizer) in classic French bistros, bustling brasseries, and fine-dining establishments. Legendary spots like 'L'Escargot Montorgueil' in Paris or traditional country inns in the heart of the Burgundy region are the ideal places to experience this dish at its peak. Whether you are a lifelong fan or a first-time sampler, Escargot remains a quintessential expression of French culinary art—a dish that celebrates tradition, technique, and the bold pursuit of flavor.

Escargots à la Bourguignonne is arguably the most iconic and celebrated snail dish in the world, a masterpiece of French culinary art that hails from the historic Burgundy (Bourgogne) region. This dish represents the height of rustic elegance, transforming the humble land snail (typically Helix pomatia, or 'Escargot de Bourgogne') into a decadent, aromatic treat. While the consumption of snails dates back to Roman times, the specific recipe 'à la Bourguignonne' became a symbol of French haute cuisine in the early 19th century. It is a dish that demands patience, precision, and an unyielding commitment to the quality of its two main stars: the snails themselves and the legendary 'beurre d'escargot' (snail butter).

The journey of Escargots à la Bourguignonne begins with the meticulous preparation of the snails. Fresh snails must undergo a process of fasting and thorough cleaning—often involving salt or vinegar—to remove any bitterness or impurities. They are then simmered for several hours in a highly aromatic court-bouillon made with white wine (preferably a Burgundy Chardonnay), carrots, onions, leeks, and a bouquet garni. This slow poaching ensures the snails are tender but remain slightly firm (al dente). Once cooled, the snails are tucked back into their cleaned, sterilized shells, waiting for the ingredient that defines the dish: the garlic butter.

The 'beurre d'escargot' is a testament to the power of high-quality French butter. Softened butter is whipped with an abundance of finely minced garlic, a generous amount of fresh flat-leaf parsley, finely chopped shallots, salt, and plenty of freshly ground black pepper. Some chefs even add a hint of nutmeg or a splash of Pernod for a subtle aniseed undertone. This fragrant green butter is piped into each shell, sealing the snail inside. The shells are then placed on a specialized snail plate (escargotière) and baked in a very hot oven just until the butter is bubbling and foaming, and the aroma of garlic and parsley fills the room. The result is a perfect emulsion of melted butter and snail juices that is as much a part of the dish as the snail itself.

Eating Escargots à la Bourguignonne is a ritualistic experience that requires specialized tools: a set of snail tongs to hold the hot shell and a tiny, two-pronged snail fork to extract the succulent meat. The snails are almost always served as an appetizer (entrée). The true aficionado knows that the meal is not complete without a basket of fresh, crusty baguette; once the snails are eaten, the bread is used to soak up every last drop of the golden, garlic-infused butter remaining in the shells—a process known as 'saucer'. In terms of wine pairing, the choice is clear: a crisp, mineral-rich white wine from Burgundy, such as a Chablis or a Meursault, which beautifully cuts through the richness of the butter and complements the earthy, herbal notes of the dish. To experience this dish at its pinnacle, one should visit a traditional Parisian bistro like 'L'Escargot Montorgueil' or a countryside 'auberge' in the heart of the Côte d'Or. It is a dish that speaks of history, indulgence, and the enduring romance of French gastronomy.

Escudella de pagés is an Andorran soup with a consistency so thick that it could also be classified as a stew. It is made with white beans, ham bone, veal or beef marrow bone, chicken, veal, cured ham, cabbage, potatoes, rice and pasta. Unlike many other soups and stews, this one is believed to be good only on the day it was made, so it should be served immediately.
