Esgarrat is a vibrant and deeply authentic dish from the Valencian Community on Spain's eastern coast, representing a masterclass in the Mediterranean art of combining simple, high-quality ingredients to create a flavor profile that is both intense and refreshing. The name 'Esgarrat' comes from the Valencian word 'esgueirar', which means 'to tear' or 'to shred'. This refers to the preparation method of the two main components: roasted red peppers and salted cod (bacalao), both of which are torn by hand into thin, uneven strips. It is a dish that celebrates the bounty of the Valencian vegetable gardens (the huerta) and the historical importance of salted fish in the Spanish diet.

The soul of a great Esgarrat lies in the preparation of the peppers. Large, fleshy red peppers are roasted over an open flame or in a very hot oven until their skin is charred and blistered. This process infuses the peppers with a subtle smokiness and concentrates their natural sweetness. Once roasted, they are covered and allowed to sweat, making it easy to peel away the skin and remove the seeds. The peppers are then hand-torn into long, silky strips, preserving the juice that is released during the roasting process, which becomes an essential part of the dressing.

The second key ingredient is the salted cod. High-quality dry-salted cod is used, which has been 'desalado' (desalted) partially or fully depending on the cook's preference. The cod is not cooked; instead, it is served raw, having been preserved by the salt. It is torn into delicate, translucent strips that provide a savory, salty punch and a chewy texture that perfectly contrasts with the soft, sweet peppers. The two elements are laid out on a platter and seasoned with an abundance of finely minced fresh garlic and a generous amount of premium extra virgin olive oil from the region. Some variations include black olives or hard-boiled eggs for added richness, but the traditional version remains remarkably minimalist.

Esgarrat is most commonly served as part of a 'pica-pica' or a selection of tapas, usually at room temperature or slightly chilled. It is an essential component of a leisurely Valencian lunch, especially during the warm summer months. The true magic of Esgarrat happens as it sits; the ingredients marry together, with the olive oil and garlic drawing out the sweetness of the peppers and the saltiness of the cod to create a savory 'jus' that demands to be soaked up with fresh, crusty bread. In terms of beverage pairings, a crisp, cold beer (una caña) is the classic choice, though a glass of well-chilled white wine from the Utiel-Requena or Valencia DOs, particularly one made from the Merseguera grape, provides an elegant and refreshing balance. To experience Esgarrat in its most authentic habitat, one should visit a traditional 'tasca' or a beachside 'chiringuito' in Valencia or Alicante. It is a dish that embodies the simplicity, the sun-drenched flavors, and the enduring culinary heritage of the Spanish Levant.

Espinacas a la catalana, or 'Catalan-style spinach', is a masterclass in the Mediterranean art of balancing sweet and savory flavors. A cornerstone of Catalan cuisine (cuina catalana), this dish represents a historical bridge between the Middle Ages—when the Arabs introduced spinach, raisins, and pine nuts to the Iberian Peninsula—and the modern day. It is a deceptively simple dish that relies on the harmony of four key ingredients: fresh spinach, sweet raisins, toasted pine nuts, and high-quality olive oil. The result is a sophisticated side dish (acompanyament) or a light main course that is celebrated for its contrasting textures and the way it elevates a humble leafy green into something truly extraordinary.

The preparation of Espinacas a la catalana begins with the quality of the spinach. While frozen spinach can be used, the true version demands large, fresh leaves with their stems removed. The spinach is briefly blanched or steamed just until it wilts, then squeezed dry to remove excess moisture—a crucial step to ensure the final dish isn't watery. In a wide skillet, a generous amount of Spanish extra virgin olive oil is heated. Two types of aromatics are added first: plump, sun-dried raisins and creamy pine nuts (piñones). The raisins are sautéed until they swell and become juicy, providing bursts of concentrated sweetness that cut through the slight bitterness of the spinach. The pine nuts are toasted to a pale golden brown, releasing their characteristic buttery, woody aroma and adding a necessary crunch to the dish.

In many traditional versions, a small amount of finely diced garlic or even a few strips of salty ham (jamón) or smoky bacon (pancetta) are added to the pan to provide a savory 'umami' base. However, the purist version remains strictly vegetarian, focusing on the interplay between the fruit and the nuts. The wilted spinach is added to the pan and tossed vigorously over medium-high heat, allowing it to soak up the garlic-infused oil and mingle with the raisins and pine nuts. The seasoning is minimal—just a pinch of sea salt and often a grinding of black pepper. The goal is a dish where the spinach is vibrant green, the raisins are plump, and every bite offers a different combination of the sweet and the savory.

Espinacas a la catalana is a versatile dish that reflects the convivial nature of Catalan dining. It is often served as part of a traditional 'menú del dia' in rustic 'fondas' across Catalonia, appearing alongside grilled meats like 'botifarra' (Catalan sausage) or roasted lamb. It also pairs beautifully with a glass of crisp, sparkling Cava or a light, fruity red wine from the Penedès or Priorat regions. To experience this dish at its best, one should visit a historic restaurant in Barcelona's Gothic Quarter or a seaside eatery on the Costa Brava. While it may seem like a humble vegetable dish, Espinacas a la catalana is a profound expression of Catalan culinary identity—a dish that has remained unchanged for centuries because it is, quite simply, perfection in a pan.

Espuma de erizos de mar or sea urchin foam is a traditional tapa that's believed to be the most exquisite of them all. It's made with a combination of sea urchins, egg yolks, pink cava or sparkling rose, cream, and salt. The egg yolks and cava are whisked until the mixture becomes foamy and thickens. The sea urchin roe (uni) and cream are beaten until foamy, and it's then mixed with the egg yolk and cava mixture. The warm mixture is spooned into cleaned sea urchin shells and served on a bed of salt. This tapa is eaten with a teaspoon.

Ezik v maslo is a quintessential Bulgarian delicacy that showcases the beauty of offal when prepared with simplicity, patience, and a deep respect for high-quality ingredients. Literally translating to 'Tongue in Butter', this dish is a staple of traditional Bulgarian meze (appetizer) culture and is frequently found in 'mehanas' (traditional taverns) across the country. While the idea of eating tongue might seem unusual to some, Ezik v maslo transforms this exceptionally tender muscle into a succulent, melt-in-the-mouth experience that is both rich and surprisingly delicate. It is a dish that celebrates the Bulgarian philosophy of slowing down, enjoying the company of friends, and savoring flavors that are rooted in the land.

The preparation of Ezik v maslo is a multi-step process that begins long before the final sizzle in the pan. Typically using veal or beef tongue, the meat is first thoroughly cleaned and then simmered slowly for several hours in a large pot with water, salt, peppercorns, bay leaves, and sometimes a few roots of parsnip or celery for added depth. This long, gentle poaching is crucial as it breaks down the tough fibers of the tongue, resulting in a texture that is incredibly soft and supple. Once tender, the tongue is immediately plunged into cold water—a technique that makes it easy to peel away the tough outer skin. The peeled tongue is then sliced into thin, elegant rounds or strips, ready for the final, transformational step.

The naming of the dish comes from this final stage: the tongue slices are briefly sautéed in a pan with a generous amount of high-quality, foaming Bulgarian butter. The goal is not to deep-fry the meat, but to allow the butter to permeate the tender slices while giving them a very light, golden sear and a nutty aroma (noisette). Towards the end of the cooking, a generous dusting of freshly ground black pepper and a sprinkle of sea salt are added. Most importantly, the dish is finished with a vibrant shower of freshly chopped flat-leaf parsley and often a squeeze of fresh lemon juice, which provides a bright, acidic lift to cut through the richness of the butter and the density of the meat.

In the context of Bulgarian dining, Ezik v maslo is rarely eaten alone. It is the king of hot appetizers, often appearing on the table alongside other traditional favorites like Shkembe Chorba (tripe soup) or Zagorski banitsa. When it comes to drink pairings, it is the ultimate companion to Bulgarian Rakia—a potent grape or plum brandy. The high alcohol content and bold fruit notes of the rakia are perfectly balanced by the savory, buttery richness of the tongue. For those who prefer wine, a robust, earthy red like a local Mavrud or a Melnik 55 provides a harmonious match. To experience Ezik v maslo in its most authentic habitat, one should visit a historic mehana in the old town of Plovdiv or a mountain inn in the Rila or Pirin ranges. There, the dish is served straight from the pan, still sizzling, representing a timeless tradition of Bulgarian hospitality and culinary craftsmanship.

Even though these protein-packed chickpea fritters are listed as one of Israel's national dishes, and are a staple in many Middle Eastern countries including Palestine and Lebanon, it is often suggested that falafel might have evolved from the Egypt dish known as taameya. By the 1950s, to earn a living, Yemenite immigrants in Israel started making falafel in the streets, selling it wrapped in paper, which has eventually transformed this ancient dish into an early form of Israeli fast food and facilitet the global recognition of it. As an alternative to the Israeli version, the Egyptian taameya uses fava beans instead of chickpeas, while the mixture is typically flavored with parsley, coriander, cumin, and onions. Today, both in Israel and other Middle Eastern countries, falafel fritters are most commonly enjoyed in pita or lafa flatbread sandwiches, topped with fresh or pickled vegetables, and coated either in hummus paste, tahini dip, or a zesty, garlic-flavored yogurt sauce.

A simple combination of green beans with almonds, fasolka z migdałami is a variation of the classic Polish green beans with breadcrumbs. It consists of steamed or boiled green beans and chopped almonds that are roasted or fried in butter. With an excellent combination of flavors, the dish makes a great vegetarian main course. It can also be served as an appetizer or a side to meat and fish dishes.

In the diverse and health-conscious landscape of Turkish cuisine, 'Fasulye pilaki' (White Bean Pilaki) stands as a cornerstone of the 'zeytinyağlı' tradition—a unique category of dishes cooked in olive oil and typically served cold or at room temperature. Originating from the cosmopolitan kitchens of Ottoman Istanbul, Pilaki represents a sophisticated method of braising legumes and vegetables, where the goal is to achieve a tender, silky texture and a flavor profile that is beautifully balanced between sweet, savory, and tangy. Fasulye pilaki, in particular, is a beloved staple of the Turkish table, representing a philosophy of patience, high-quality ingredients, and the belief that the best meals are often those that have been allowed to rest and mature.

The essence of a great Fasulye pilaki lies in the preparation of its primary components. The star of the dish is the 'kuru fasulye' (dried white bean), specifically the large, creamy varieties like 'dermason' or 'horoz fasulye'. These beans are soaked overnight and then simmered until tender but not mushy. The 'pilaki' base is a fragrant aromatic base consisting of onions, carrots, and potatoes, all cooked in a generous amount of high-quality extra virgin olive oil. Tomatoes or a small amount of tomato paste are added for color and depth, but the secret to an authentic flavor is the addition of a touch of sugar and a few cloves of garlic. The dish is simmered slowly, allowing the beans to absorb the flavors of the vegetables and the oil, creating a rich, emulsified sauce that is the hallmark of the pilaki method.

A crucial aspect of Fasulye pilaki is the cooling and serving process. Unlike many bean dishes, it is never served piping hot. Traditionally, it is allowed to cool in the pot, which allows the olive oil to thicken and the flavors to meld into a harmonious whole. Before serving, the dish is finished with a liberal squeeze of fresh lemon juice and a generous garnish of finely chopped flat-leaf parsley. This final bright touch provides a necessary acidity that cuts through the richness of the oil and highlights the earthy sweetness of the beans and carrots. In many regional variations, a few slices of lemon or a sprinkle of red pepper flakes (pul biber) are added for visual appeal and an extra kick of flavor.

Fasulye pilaki is an incredibly versatile star of the Turkish culinary scene. It is a staple 'meze' (appetizer) in 'rakı' tables, where its cool, comforting nature provides a perfect counterpoint to the anise-flavored spirit. It is also an essential part of a 'zeytinyağlı' platter at lunch or as a light and healthy dinner accompanied by crusty bread. Because it can be prepared in advance and tastes even better the next day, it is a favorite for family gatherings and festive buffets. To experience Fasulye pilaki at its most authentic, one should visit a traditional 'esnaf lokantası' (tradesmen's restaurant) in Istanbul or a coastal 'meyhane' where the traditions of the Aegean are honored. It is a dish that celebrates the simple joy of wholesome ingredients, the heritage of Mediterranean cooking, and the enduring appeal of the Turkish olive oil tradition.

In the rich and celebratory tapestry of Middle Eastern cuisine, 'Fattah djaj' (Chicken Fatteh) stands as a monumental dish that embodies the region's philosophy of layered flavors and textures. Originating from the Levant (comprising Lebanon, Syria, Jordan, and Palestine) and Egypt, the term 'Fatteh' is derived from the Arabic word meaning 'to crumble' or 'to crush,' referring to the foundational layer of toasted or fried bread. What began as a resourceful way to repurpose day-old flatbread has evolved into a sophisticated piece of culinary art, often served during festive occasions, family gatherings, and the holy month of Ramadan. Fattah djaj is a masterclass in contrast: the crunch of the bread, the fluffiness of the rice, the tenderness of the poached chicken, and the velvety smoothness of the yogurt sauce.

The architecture of a great Fattah djaj is built in four distinct layers, each requiring careful preparation. The base consists of 'pita' or 'khubz' that has been cut into small diamonds and either toasted until golden or deep-fried in high-quality oil for maximum crunch. This is followed by a layer of long-grain rice, often infused with aromatic spices like cardamom, cinnamon, and bay leaves, and cooked to fluffy perfection. Nestled atop the rice are generous portions of chicken that have been slow-poached in a fragrant broth (leche) enriched with onions, garlic, and whole spices. The chicken is then shredded by hand, ensuring every bite is succulent and carries the essence of the cooking liquid.

The crowning glory of the dish is the 'Fatteh' sauce, a sophisticated blend of thick, creamy yogurt, tahini (sesame paste), crushed garlic, and a bright splash of lemon juice. This sauce is drizzled over the layers, binding them together with its cool, tangy, and nutty profile. The final touch—the 'splash' or 'tasha'—involves sizzling pine nuts (snobar) or slivered almonds in browned butter or ghee, which are poured over the yogurt just before serving. This not only adds a final layer of luxurious richness and crunch but also creates an irresistible aroma that announces the arrival of the feast.

Fattah djaj is a dish of pure conviviality, traditionally served in a large, communal platter known as a 'sidni'. It is a centerpiece designed to be shared, where each guest spoons out a portion that captures all four layers. Because of its richness, it is often accompanied by a simple side of light pickles or a fresh vegetable salad like 'Fattoush'. For beverage pairings, a refreshing glass of 'Ayran' (yogurt drink) or a chilled mint lemonade provides a perfect balance. To experience Fattah djaj at its most authentic, one should visit a traditional Lebanese restaurant in Beirut or a historic family-run eatery in Damascus or Cairo. It is a dish that celebrates the transformation of simple, humble ingredients into a majestic feast—a true testament to the heart and hospitality of the Middle Eastern table.

A variation on Levantine fatteh, fattet hummus typically consists of toasted or fried pieces of pita bread and chickpeas that have been layered in a serving dish before being drenched in a garlicky tahini-yogurt sauce. This specialty is usually garnished with toasted pine nuts or almonds, fresh parsley or mint leaves, a drizzle of olive oil, and a touch of paprika or cayenne pepper on top. Some versions call for soaking the bread in broth or adding chickpea broth to the combination, while others call for using hummus paste instead of whole chickpeas. This dish is commonly prepared across the Levant, and it may sometimes be served with chunks of sautéed lamb or beef on top. Fattet hummus is typically enjoyed for breakfast, although it can also be eaten as a side dish or as an appetizer, and it is often served as the main dish for Iftar. It is recommended to accompany this dish with a cup of sweet black tea with fresh mint leaves or an Arabic mezze platter on the side.

In the sophisticated and tradition-bound world of Turkish 'meze' culture, 'Fava' stands as a serene and elegant masterpiece of the 'zeytinyağlı' (olive oil-based) tradition. Not to be confused with the fresh broad beans used in other Mediterranean cuisines, Turkish Fava is specifically prepared from dried, split broad beans (dried fava beans), which are cooked until they dissolve into a rich, earthy puree. Originating from the Aegean coast and the cosmopolitan kitchens of Istanbul, Fava is a dish that embodies the Turkish culinary genius for transforming humble, shelf-stable ingredients into a luxurious, silky delicacy. It is a staple of 'meyhane' (traditional tavern) tables, providing a cool, velvety counterpoint to the more fiery and robust dishes of the feast.

The creation of a perfect Fava is an exercise in patience and precision. The dried beans are simmered slowly with onions, often a touch of sugar to enhance their natural sweetness, and sometimes a few cloves of garlic. The secret to its iconic texture is twofold: the ratio of liquid to beans and the generous use of high-quality extra virgin olive oil. Once the beans are tender enough to melt, they are pureed until exceptionally smooth—a process that was traditionally done by pressing the beans through a fine sieve. While still warm and fluid, the mixture is poured into a shallow dish or a decorative mold. As it cools, the proteins and starches in the beans set, creating a firm yet creamy blocks that can be sliced into elegant rectangles or diamonds.

Presentation and garnishing are essential to the Fava experience. The sliced blocks are meticulously arranged and then drizzled with another layer of golden olive oil, which pools in the crevices of the dish. A hallmark of Turkish Fava is the generous use of fresh dill ('dereotu'), whose bright, anise-like aroma provides a vital herbal contrast to the dense, starchy beans. Many cooks also add a topping of finely diced red onions or scorched scallions, adding a sharp, crunchy texture and a pop of color. The result is a dish that is visually striking—a pale, mustard-yellow palette accented by vibrant greens and purples—and deeply satisfying in its complexity.

Fava is the ultimate social dish of the Turkish table. It is most famously enjoyed as a 'meze' alongside 'rakı', the national anise-flavored spirit, where its smooth consistency and earthy profile are said to coat the palate and enhance the drink's flavor. It is also an essential part of any 'zeytinyağlı' platter, paired with crusty sourdough bread that is used to scoop up the creamy puree. Beyond its role as an appetizer, Fava is prized for its nutritional value, being rich in protein and fiber, making it a favorite for those seeking a healthy Mediterranean diet. To experience Fava at its most authentic, one should visit a historic 'meyhane' in the Karaköy district of Istanbul or a seaside tavern in the Aegean town of Ayvalık. It is a dish that reminds us that with a good olive oil and a respect for tradition, a simple bean can be elevated to the height of culinary elegance.

A specialty of Anhui cuisine, phoenix tail shrimp consists of crispy-fried, battered shrimps. It is typically prepared with large freshwater shrimps that have been shelled and deveined but with their tails left intact. Once cleaned, the shrimps are coated with a batter of flour, water, and seasonings, leaving the tails exposed before they’re fried to crispy perfection. The frying process makes the shrimps' tails bright red, crispy, and tilted upward, giving them a close resemblance to a phoenix's tail, hence the name phoenix tail shrimp. In China, these deep-fried crustaceans are typically enjoyed hot, accompanied by lemon wedges and a variety of dipping sauces on the side. Phoenix tail shrimps are usually eaten as snacks or appetizers.

One of Albania's national dishes, fërgesë tirane is a baked vegetable and cheese specialty originating from the capital of Tirana. Traditionally, this recipe uses bell peppers, onions, tomatoes, locally made salted cottage cheese (or feta cheese as a substitute), basil, butter, flour, and olive oil. The vegetables are sautéed, while the butter and flour make a roux in a separate pan, and the cheese is set to melt over it. All the ingredients are mixed in small clay pots, seasoned, and baked in the oven. After the dish has slightly cooled down, it is served with crusty bread on the side. The vegetable version of this specialty is referred to as fergesë e tiranës me speca or fergesë e tiranës me piperka in Albanian. Another version of this dish, named fërgesë me melçi or tavë dheu me mëlçi, is created by adding chopped liver and garlic to the mixture, and the veal version is known as fergesë e tiranës me mish viçi. While the vegetarian version is mostly served as a side dish, the version prepared with meat is often served as the main course.

Féroce d'avocat is a traditional West Indian specialty that's popular in Martinique and Guyana. It's made with a combination of avocado, cassava flour, garlic, chili peppers, lime juice, salt cod, and spinach leaves. The cod is boiled, and its flesh is then mixed with the other ingredients until the mixture becomes homogeneous. The mix is seasoned with salt and pepper, chilled, then served as a spread, usually presented in an avocado shell. This dish was typically eaten by plantation workers for breakfast, and nowadays it's usually served as an appetizer. The translation of the name literally means fierce avocado, where fierce refers to the strong and spicy Caribbean chili peppers.

Fettunta is a traditional appetizer originating from Tuscany. In local dialect, the name of the dish is a compound of fetta, meaning slice, and unta, meaning oily, making fettunta an oily slice, or to be more precise, an oily slice of roasted local saltless bread with a drizzle of extra virgin olive oil. Many people like to rub a garlic clove and add a pinch of salt over the bread before the olive oil is poured on top. But to call this delicate appetizer garlic bread would be an insult to all Italians – after all, fettunta is thought to be the predecessor of the famous bruschetta and can be traced back to the ancient Romans or even the Etruscans. Nowadays, it's a classic way to celebrate the new olive oil in November. It's recommended to pair fettunta with a glass of Chianti Classico.

Ficelle picarde or Picardy string is a traditional dish from the French region of Picardy, a simple and easy entrée that can be found on the menus of numerous restaurants across northern France. The dish consists of a savory pancake that is filled with ham, cheese, and mushrooms. The pancake is often topped with grated cheese, and it is sometimes baked in the oven. Although it is a representative of the Picardy region, it was actually invented in the city of Amiens in the 1950s, when it was served to notable locals attending the Hotoie Exhibition. Amiens' leading chefs had to invent new, imaginative dishes for the event, and as a result, a chef named Marcel Lefévre created the ficelle picarde.

In the sophisticated and ingredient-driven world of Italian gastronomy, 'Fichi e robiola' (Figs and Robiola cheese) represents a perfect marriage of seasonal abundance and artisanal craftsmanship. This combination is a masterclass in the Mediterranean philosophy of 'semplicità' (simplicity), where the inherent quality of each component is allowed to shine without the need for complex preparation. It is a dish that celebrates the arrival of late summer and early autumn—the season when figs are at their honeyed peak—and pairs them with one of Italy's most storied and delicate fresh cheeses. Fichi e robiola is more than just an appetizer or a dessert; it is a sensory journey through the Italian landscape, capturing the essence of the sun-drenched orchards and the lush pastures of Northern Italy.

The soul of this pairing lies in the contrast between its two primary elements. The figs used must be perfectly ripe, with skin that is thin and tender, and an interior that is jammy and bursting with natural sugars. Whether they are the green-skinned Dottato or the deep purple Brogiotto, the figs provide a soft, yielding texture and a concentrated sweetness. This is perfectly balanced by the Robiola, a soft-ripened cheese originating from the Langhe region in Piedmont. Robiola is often made from a blend of cow, goat, and sheep milk (known as Robiola di Roccaverano), which gives it a unique, complex flavor profile that is creamy, slightly tangy, and subtly floral. The cheese's velvety consistency provides a luxurious mouthfeel that complements the grainy, seed-filled texture of the figs.

Preparation of Fichi e robiola is intentionally minimal to preserve the integrity of the ingredients. Often, the figs are simply sliced into quarters or halves and topped with a generous dollop of the fresh cheese. To elevate the dish into a true gourmet experience, many chefs add a final touch of aromatic complexity. A drizzle of high-quality acacia honey or a few drops of aged Traditional Balsamic Vinegar from Modena or Reggio Emilia can enhance the sweetness and add a necessary touch of acidity. For a textural contrast, a sprinkling of toasted Piedmont hazelnuts or chopped walnuts provides a satisfying crunch. In some innovative versions, a leaf of fresh mint or a dusting of finely ground black pepper is added to provide a surprising but harmonious top note.

Fichi e robiola is a versatile dish that reflects the convivial nature of Italian dining. It is equally at home as a sophisticated 'antipasto' to stimulate the palate before a main course, or as a light and elegant 'formaggio e frutta' (cheese and fruit) course to conclude a meal. It is a staple of wine country picnics and elegant garden parties across Northern and Central Italy. When it comes to beverage pairings, a chilled glass of Moscato d'Asti provides a classic sweet match, while a crisp, aromatic white wine like a Roero Arneis or a light, fruity red like a Dolcetto d'Alba offers a refreshing balance. To experience Fichi e robiola at its most authentic, one should visit a 'trattoria' in the rolling hills of Piedmont during the autumn harvest or browse the artisanal cheese stalls of a local market in Milan or Turin. It is a dish that reminds us that in the world of food, as in life, the most beautiful things are often the simplest.
