Affunnatielle is a traditional dish originating from Molise. It consists of scrambled eggs with peppers. The dish is made with a combination of chopped bell peppers, ripe tomatoes, beaten eggs, olive oil, basil, onions, parsley, diavolillo chili pepper, and salt. The onions and peppers are sautéed in olive oil, followed by the diavolillo, tomatoes, basil, and parsley. When the sauce develops a slightly thick consistency, the eggs are added to the pan, and as soon as they set, the dish is done. Affunnatielle is usually served on the table in the same cooking pot.
