Ardglass Potted Herring

This simple and classic dish from Northern Ireland is prepared by rolling the famous Ardglass herrings in a dish and adding vinegar, raw onions, spice berries, salt, and pepper. The dish is baked until the tops of the fish become crispy. It is recommended to serve the herrings accompanied by crusty brown bread and butter on the side, to mop up the juices.
