
Baoshao

Baoshao is a cooking technique of preparing food by wrapping it in banana leaves and cooking or grilling it in charcoal. The technique is used by the Dai people in Yunnan province, China, and many types of food can be prepared this way, from vegetables and offal to fish and meat. Prior to cooking, the banana leaves are either blanched in water or heated over a flame in order to soften and sanitize them. Typically, the food is wrapped in three banana leaves.
