
Cottage Pudding

Although it contains the term pudding, cottage pudding is, in fact, a single-layer yellow cake that has a sweet glaze or is poured over with custard, which gives the cake its mushy and soft texture. The cake is entirely North American in origin, with the earliest recipe dating back to 1863 or 1864, when it was published in a popular 19th-century women’s magazine called Godey’s Lady’s Book.
