Fajitas are a vibrant, sizzling centerpiece of Tex-Mex cuisine that perfectly capture the bold, communal spirit of the American Southwest. The name itself is derived from the Spanish word 'faja', which refers to a 'belt' or 'strip', specifically the skirt steak cut (arrachera) that was traditionally used by Vaqueros (cowboys) in the Rio Grande Valley along the Texas-Mexico border. Historically, these cowboys were given the less desirable cuts of beef as part of their pay, and through culinary ingenuity, they discovered that by marinating this challenging, fibrous cut in lime juice and spices and then grilling it quickly over mesquite coals, they could transform it into a succulent, flavorful delicacy. Today, fajitas have evolved from a humble campfire meal into a global sensation, served with theatrical flair in specialized restaurants.
