
Footi

Technically a sauce, practically a stew, footi is a specialty of Guinea, but it is also popular in Senegal. It consists of tomatoes, eggplants, onions, kidney beans, water, and a bouillon cube. The ingredients are slowly simmered for about three hours, and the sauce is then ready to be consumed. It is traditionally served with rice or meat dishes.
