
Gatnabour

Gatnabour or katnapour is a traditional rice pudding originating from Armenia. It’s usually made with a combination of rice, milk, salt, sugar, and water, while cinnamon powder and rose water are common additions. The rice is cooked in boiling water until almost tender, and it’s then finished in a pot filled with warm milk. The mixture is cooked over low heat, and it’s constantly stirred. Once the rice pudding thickens, salt and sugar are stirred in, and gatnabour is then served in individual bowls. This rice pudding can be enjoyed warm, at room temperature, or chilled. If desired, the top can be sprinkled with cinnamon powder before serving.
