Ghameh

Ghameh is a traditional dish of stuffed tripe and intestines. Both need to be washed in soapy water and rinsed several times in order to remove the slightly off-putting aromas and flavors. They're usually stuffed with a combination of chickpeas, rice, tomatoes, onions, and minced lamb that's seasoned with salt, black pepper, cinnamon, and allspice, but there is many different ways of making ghameh depending on the region so the ingredients may vary. Once stuffed, the tripe and intestines are sewn up and placed into a pot where lamb trotters are already simmering in a rich broth. The dish is served hot with some broth on the side.
