Itamemono is a Japanese method of cooking the ingredients by stir-frying. Meat, seafood, and vegetables are typically prepared for itamemono in Japan and there is a large number of itamemono dishes such as chanpuru and yakisoba. The concept of stir-frying doesn’t originate from Japan but China, and itamemono has been very popular in Japan ever since the 1950s. The ingredients are cooked in a little oil over high heat in a short amount of time. As a result, the food is not overcooked or mushy. Some other popular itamemono dishes include moyashi-itame (pork belly and bean sprouts) and rebanira-itame (pork liver and Chinese chives).
