Mashuai

Mashuai is a traditional fish specialty made by spit-roasting a whole fish which has been rubbed with oil and spices. Traditionally, this dish is prepared with kingfish, known locally as kanad, which is abundant in the coastal waters of Oman. Typical spices used for flavoring the fish include cumin, ground coriander seeds, cinnamon, ginger, turmeric, and salt. The roasted fish is typically enjoyed immediately, and it is usually served over a bed of lemon-flavored rice with cashews or rice on the side.
