Phokso

Phokso fry is a traditional Nepalese dish consisting of fried goat lungs. The lungs must be fresh and properly cleaned. They are filled with a batter of flour, eggs, turmeric, coriander, cumin, chili powder, salt, garlic, and ginger. The trachea is sealed with a small potato piece, then tied with a kitchen string. The lungs are then cooked, sliced, and fried in oil on both sides until crispy and golden brown. Before serving, the fried lungs are sprinkled with salt, chili powder, and cumin powder. The dish is always served hot.
