Quiche au homard

This variety of quiche uses chopped lobster meat as the star ingredient. Traditionally, a pie shell is filled with cheese, chopped scallions, lobster meat, and a batter made with eggs, sour cream, and Dijon mustard. The whole concoction is then baked in an oven until the top becomes golden-brown and crunchy, and lobster quiche is ready to be consumed.
