Sopa de hongos y poblano is a traditional soup originating from Puebla. The soup is usually made with a combination of onions, garlic, mushrooms, poblano chili peppers (roasted and diced), oil, corn, tomatoes, chipotle chili peppers, epazote, chicken stock, salt, pepper, and zucchini flowers. The ingredients are simmered in chicken stock until everything is tender, and the soup is then seasoned with salt and pepper, garnished with shredded zucchini flowers, and served while still hot.
