Soupe crasse
Soupe crasse is a traditional bread soup originating from the northern parts of the country. The dish is usually made with a combination of breadsticks (or day-old bread), chicken stock, butter, Taleggio cheese, onions, salt, and pepper. In a buttered pan, the breadsticks and cheese are placed in alternating layers, and then covered with the stock. The mixture is brought to a simmer and cooked over low heat for about half an hour. The onions are sautéed in butter until soft, and the butter is then strained while the onions are discarded. The butter is drizzled over the soup, it's simmered for a few more minutes, and the breadstick soup is then served in individual plates or bowls. Soupe crasse is typically made during the holiday season.
