
Supu ya malenge

This soup is made with chopped deseeded pumpkin, carrots, potatoes, stock, ginger, garlic, onions, and oil. In Kenyan cuisine, pumpkin is used in a number of ways – as a side dish, a replacement for potatoes, or in traditional soups such as this one, supu ya malenge. All of the ingredients are blended together until the soup reaches a desired silky-smooth consistency. Depending on personal preferences, supu ya malenge can also be additionally enriched by the addition of heavy cream.
