
Tiet canh vit

Tiet canh vit is a traditional version of tiet canh, or blood pudding. This version is made with raw duck blood, ground boiled duck neck, boiled duck offal, fish sauce, and various spices and herbs (basil, chili, lemon leaves). The combination is boiled and steamed until done and bright red in color. When served, this duck blood pudding is often topped with crushed peanuts, lemon juice, and herbs. It's usually served with rice or sesame seed rice crackers as an accompaniment, and a glass of rice wine on the side.
