
Dango-jiru

Dango-jiru is a traditional dish originating from Oita, Kyushu, where it's considered a specialty of the city. The dish is made with a combination of hand-kneaded thick wheat dango noodles, onions, leeks, taro, carrots, shiitake mushrooms, and a broth that's often flavored with miso and niboshi (dried baby sardines). The sweetness of the vegetables enriches the flavors of the soup, which pairs well with the noodles. The word dango means ball or dumpling, while jiru means soup, hence the name of the dish.
