Ricotta stregata

Ricotta stregata is a gelato flavor made with a creamy base of cream, sugar, soft ricotta cheese, and Strega—Italian herbal liqueur. This light ice cream often includes bits of candied orange and pieces of dark chocolate. Some versions also have chunks of sponge cake, which are sometimes also used as a decoration. The whole combination results in airy ice cream with a creamy texture speckled with crunchy chocolate and candied orange bits.
