An Alsatian version of the classic coq au vin, known as coq au Riesling is a dish consisting of chicken, mushrooms, onion, lardons, and dry Riesling wine from Alsace, recognized as one of the best wines in the world. It is said that the dish is even better when reheated the next day due to the flavors that deepen when left in the fridge overnight. The chicken can be served over egg noodles, white rice, boiled potatoes, or the more traditional sp&auml;tzle, making for a great comfort dish, especially on a cold winter's night.

This dish is the perfect showcase for the harmonious coexistence of its two main ingredients &ndash; coq, or rooster, and vin, or wine, in this case a bold, rustic red wine. The rooster is cut into sections and combined with rooster's blood, onions, carrots, garlic, thyme, bay leaves, parsley, mushrooms, salt, pepper, and a hefty dose of red wine. The ingredients are then slowly cooked over low heat until the meat becomes tender. One of the first documented recipes for coq au vin dates back to 1913, when the French natural philosopher and zoologist Mathurin Jacques Brisson stumbled upon the dish in the Cha&icirc;ne des Puys region. Julia Child later popularized the recipe among English-speaking audiences on her TV program The French Chef. This simple "drunk chicken" dish is often accompanied by steamed or boiled parsley potatoes or buttered noodles.

Slices of roasted lamb are typically accompanied by roasted vegetables, other meats, potatoes, fresh salads, and sauces, and they are usually washed down with full-bodied red wines such as Malbec, Merlot, or Cabernet Sauvignon.

The dish can be served with a variety of side dishes such as french fries or a selection of vegetables and garnishes such as lemon wedges and parsley.

It was created in 1953 by Constance Spry and Rosemary Hume to celebrate Queen Elizabeth II's coronation. The dish is made with a combination of pork chops, dry white wine, butter, shallots, cream, Dijon mustard, vinegar, pickles, tarragon, and chervil. The pork chops are fried in butter and seasoned with salt and pepper. They're removed from the pan and it's then deglazed with white wine and vinegar. Shallots are added to the pan and the mixture is reduced, mixed with cream, mustard, and pickles. The dish is simmered for a few more minutes, garnished with chervil and tarragon, and then served hot. C&ocirc;te de porc &agrave; l'berdouille dates back to the 1960s.

Cotoletta alla bolognese is a traditional meat dish originating from the region of Emilia-Romagna. The dish is made with veal cutlets that are pounded until thin. Just like its distant Viennese cousin, cotoletta alla Milanese is a thinly pounded, breaded, pan-fried veal cutlet. Although similar, the two dishes do differ slightly: the Viennese version is traditionally dipped in both flour and bread crumbs before being fried in oil, butter, or a combination of both, while the Milanese version is cooked bone-in and uses only bread crumbs and butter. It is often suggested that the similarities between these two culinary classics are not purely coincidental, as Milan was a part of the Austro-Hungarian Empire in the 17th and 18th century. However, when responding to any superficial comparison between the cotoletta and Wiener schnitzel, the Milanese will proudly point out that their dish has been a specialty of Milan and Lombardy since the 12th century. A recent Milanese invention is a version of the cotoletta called l&rsquo;orecchia di elefante (lit. elephant's ear) in reference to its size and shape, while the original version gets its name from la costoletta - the cut of meat traditionally used to make it, a nearly inch-thick bone-in veal chop.

Often referred to as the first fusion dish ever developed, the Anglo-Indian country captain is a stew of curried chicken that's served over white rice and dotted with raisins, currants, and almonds. A favorite of Franklin D. Roosevelt and George S. Patton, country captain was first popularized by the army, but by the 1950s, when recipes abundantly started to appear in newspaper columns and cookbooks, the dish gained the reputation of a Southern classic.
