What do critics say about Amatriciana in Rome?
My master chef prepares different types of pasta every day, serving up a bucket of pork pasta followed by a bucket of vegetable pasta, offering a kind of healing experience. You can think of it as a local pasta shop; their real work is playing around with the pasta dough in the back. Both pasta dishes were delicious, and the price was very reasonable. Definitely worth a visit.

What is Amatriciana?
Amatrice sits in the mountains of Rieti province, and the sauce named after the town is guanciale, tomato, pecorino and chilli. The municipal recipe, given a local designation in 2015, is explicit about the omissions: no onion, no garlic. Amatriciana is the middle term in Rome's sequence of four sauces.
